Crispy Pork Belly Tacos

Things have been rough. The restaurant has been busy, and as per the norm, short staffed. We’ve made it through, but it’s been a struggle. On top of that, the politics of a growing business have made things difficult too.

We’ve been on a solid roll creatively though. A great steak dish that was a tongue in cheek play on a Biggie Smalls lyric (“steak, cheese eggs…”) Stir Fry, Cajun Wings, the Rachel, Crispy Pork Belly Tacos, Ghost Pepper Hot Wings, Boxty (Irish Potato Pancake.) The tacos and Boxty haven’t hit the dining room yet (that comes next Tuesday) but if they go like the last few have, we’ll be in good shape.

Boxty, actually brings back a lot of childhood memories. Any time we had mashed potatoes as a child, my father would be sure to whip up a batch of potato pancakes within a day or two. A recipe he learned from his parents, who learned it from their parents, who brought it over from Ireland. Growing up we thought they were a German thing, we never knew there was actually an Irish version.

I guess spreading my interpretation of my childhood favorites to my the public has become my culinary mission. I don’t even think I realized it until right now either. So I guess that raises the question, of what childhood dish do I tackle next?
